Banana & Chocolate Mini Doughnuts

Just before I went away, I purchased a mini doughnut tray off of eBay with the intention of making something scrummy when I got back. With all of the travel excitement I forgot all about it, so when I found it this morning, I knew I had to try it out. First of all I tried some apple and cinnamon ones but despite using a recipe, the mixture was too wet and it just didn’t work. Anyway, undeterred, I had a go at making some banana ones-and they turned out perfectly. Hooray! There will definitely be more recipes on the way!
Have you ever made baked doughnuts? Any tips or favourite recipes?


Doughnuts-75g plain flour, 1/2 tsp baking powder, 1/4 tsp salt, 55g sugar, half a ripe banana, 1 egg, 1 cap-full of milk, 1 tsp vanilla extract

Chocolate-1/2 tsp golden syrup, 4 squares dark chocolate, 1 tsp butter.


-Preheat oven to 160c and grease tray.

-Add dry ingredients in a bowl and combine.

-Mash the banana, add the egg, vanilla and milk and mix.

-Add the wet mixture to the dry mixture and combine.

-Spoon (or pipe, if you’re fancy!) the mixture evenly into the tray. It should be the perfect amount.

-Bake for 8-10 minutes, when springy to the touch.


-Remove from the tray. You may need a little help from your friend Mr Teaspoon!

-Heat the chocolate, butter and syrup in a small bowl in the microwave for 15-20 seconds. Do not let it burn!! You could alternately mix it in a bowl over a saucepan of hot water.

-Dip half of the doughnut in the chocolate and leave to cool.dsc00838
