Simple Sweet Potato Gnocchi

Hello lovely people,

Today I’ve been making some gorgeous sweet potato gnocchi. I served mine with some vegetarian pesto and spinach but you can serve yours with whatever sauce you like.

I never to like gnocchi, unlike other pastas because I found it too thick and bland but I’ve come to like it. It’s soft and satisfying and if you make it yourself, you can make it quite tasty. I personally much prefer to make it with sweet potato and herbs than regular potato. This simple recipe is also egg free.

It’s such a simple recipe; anyone can make it!

50/50 sweet potato/ plain flour ( I find 100g of each make enough gnocchi for one person), a large pinch of rosemary,  s&p

Peel and chop the sweet potato.

Boil in a pan of salted boiling water until soft.

Drain, mash and leave to cool.

Sift the flour into a large bowl and mix in the herbs, salt and pepper.

Add the mashed sweet potato and form a dough.

Roll the dough into a sausage and cut into pieces.

Roll each piece into a small sausage and roll it length ways with the prongs of a fork.

Drop into boiling water and boil for 5-6 minutes.

Drain and stir in a sauce.
