Spiced Carrot, Coriander & Ginger Soup

Evening readers,

Have you noticed how the evenings have been slowly drawing in and the mornings have been getting chilly? I love it!

Autumn is My favourite time of year. Soups, crumbles and lots of cups of tea. Walking through crunchy leaves and wearing scarves and bobble hats! What could be better?

Here’s a lovely, warming soup recipe to get you started. Enjoy!


A bag of carrots, one onion, garlic, garam masala, thumb of ginger, salt and pepper, oil, stock


-Chop the onion and ginger and add it to a large pan with a splash of oil, a teaspoon of garlic, a tablespoon of garam masala, salt and pepper.

-Fry until onions are soft and golden.

-Add carrots and stir in.

-Cover with stock and boil until carrots are soft (approximately 20 minutes).

-When slightly cooked either blend or mash with a potato masher.

-Eat! Nom nom nom.
